
Chef Davin Waite of Oceanside restaurants The Plot, and Wrench & Rodent Seabasstropub will be taking over Lilian’s at The Inn at Rancho Santa Fe for a night of “culinary exploration” on Saturday, March 29. With seatings from 5 to 8 p.m., guests can enjoy a four-course dinner highlighting the Plot’s vegan cuisine.
The takeover is a part of the inaugural Wellness Weekend at The Inn, three days worth of wellness activities including a Friday pop-up boutique, mini Mila Moursi Spa treatments, yoga and a floating sound bath in the resort pool.
The Saturday night takeover at Lilian’s will celebrate Waite’s reputation as a trailblazer in the sustainable food community. He has gained recognition for his creative and adventurous dishes and for his commitment to minimizing food waste with his zero-waste menus at his three Oceanside restaurants. In 2022, he was honored with the Sustainability Advocate Award by the California Travel Association.
